Sesamzaad
Sesamzaden (Sesamum indicum) worden gebruikt als onbewerkte of geroosterde ingrediënten in gebak, ijs, graanproducten en chocolade, en voor de productie van olie of pasta. Etikettering is verplicht in de Europese Unie, Canada en Australië.
Sesamallergie is een groeiende voedselallergie omdat steeds meer sesam wordt geconsumeerd, in samenhang met de groeiende aandacht voor een gezonde levensstijl en gezonde voeding. Sesam wordt ook vaak gebruikt in vegetarische diëten. Bovendien kan sesam ernstige allergische symptomen veroorzaken, zoals een anafylactische shock. De enige effectieve benadering om gesensibiliseerde patiënten te beschermen tegen allergische symptomen, is de strikte vermijding van sesamhoudende voeding. In de Europese Unie, Canada en Australië is etikettering van sesam verplicht op voorverpakte voedingsmiddelen, omdat sesam is opgenomen in hun lijsten van belangrijke allergieveroorzakende stoffen. Tot nu toe werden zeven verschillende eiwitten van sesam geïdentificeerd als allergenen (Ses i 1-7). De enige effectieve benadering om gesensibiliseerde patiënten te beschermen tegen allergische symptomen, is de strikte vermijding van sesamhoudende voeding.
Sesam kan aanwezig zijn in diverse voedingsmiddelen, waaronder bakkerijproducten, bakmengsels, koekjes, chocolade of desserts. Op productielocaties worden sesamhoudende en sesamvrije voedingsmiddelen geproduceerd op dezelfde productielijnen. Hier is ongewenste kruisbesmetting met sesam mogelijk. Daarom is het noodzakelijk om deze voedingsmiddelen te analyseren.
