Allergieën voor kippeneieren treffen vooral jonge kinderen. De consumptie van eieren kan ernstige allergische reacties veroorzaken, zoals anafylactische shock, en moet daarom strikt worden vermeden.
Het is belangrijk om op te merken dat eieren een ingrediënt kunnen zijn van veel voedingsmiddelen, zoals noedels, saladedressings, bakproducten en ijs. Kippeneieren bevatten diverse allergenen, bijvoorbeeld ovomucoïde, ovalbumine, ovotransferrine en lysozym C. De meeste allergenen bevinden zich in het eiwit, terwijl de dooier slechts weinig allergenen bevat. Als u ervoor wilt zorgen dat een product veilig is voor mensen met een allergie, moet u het allergeengehalte van het product analyseren. Wij bieden gevoelige ELISA-testen en gebruiksvriendelijke lateral flow tests aan voor de detectie van ei-proteïnen in voedingsmiddelen.
