Fumonisine

Fumonisinen zijn kankerverwekkende, neuro-, hepato- en pneumotoxische metabolieten van Fusarium moniliforme, een gastheerspecifieke schimmel die op mais groeit.

De dosis fumonisine die nodig is voor toxische effecten verschilt aanzienlijk per diersoort. Een concentratie van circa 5–10 mg/kg fumonisine in voeder leidt tot neurotoxische effecten bij paarden. Bij varkens kan de inname van 4–16 mg/kg lichaamsgewicht leiden tot levercirrose en kan meer dan 16 mg/kg lichaamsgewicht leiden tot longoedeem. Kippen verdragen hogere concentraties fumonisine in voeder, tot 75 mg/kg. Rundvee lijkt ongevoelig te zijn voor hoge concentraties fumonisine.
