È importante notare che le uova possono comparire come ingrediente in molti alimenti, come pasta, condimenti per insalata, prodotti da forno e gelati. Le uova di gallina contengono vari allergeni, per esempio l’ovomucoide, l’ovoalbumina, l’ovotransferrina e il lisozima C. Gran parte degli allergeni è presente nell’albume, mentre il tuorlo ha un basso potenziale allergenico. Se si vuole avere la certezza che un prodotto è sicuro per i soggetti allergici è necessario analizzarne il contenuto di allergeni. Per la rilevazione delle proteine delle uova negli alimenti offriamo test sensibili, come i kit ELISA o i pratici test a flusso laterale.
