Frutta a guscio
L’allergia alla frutta a guscio è una delle più comuni allergie alimentari. Circa l’uno percento della popolazione presenta reazioni allergiche a questi ingredienti.
Si utilizza il termine “frutta a guscio” per indicare noci cresciute sugli alberi, da non confondersi con le arachidi, che crescono sottoterra. Non tutti i tipi di frutta a guscio presentano lo stesso livello di allergenicità. L’allergia alle nocciole è particolarmente diffusa, mentre mandorle o cocco, per esempio, sono spesso meglio tollerati. Un test per le allergie consente ai soggetti allergici di capire quali noci possono o non possono consumare.
Questi frutti sono considerati tra gli allergeni più importanti e la loro presenza deve sempre essere segnalata, come da Direttiva UE 2007/68/EC; possono però risultare presenti a causa di processi di contaminazione incrociata, anche negli stabilimenti che non ne fanno uso. Questo può avvenire, per esempio, durante la produzione di dolciumi, merendine, prodotti da forno, cioccolato, biscotti, cereali e gelati. Alcuni produttori scelgono di tutelarsi con avvertenze di questo tipo: “Può contenere tracce di frutta a guscio”.
Per i soggetti allergici è importante avere la garanzia che un prodotto alimentare sia effettivamente privo di frutta a guscio, se dichiarato tale. È quindi necessario controllare attentamente tanto le aree produttive quanto i prodotti finali. A tale scopo offriamo una gamma completa di kit per le diverse tipologie di frutta a guscio:
