Quella alle arachidi è una tra le allergie più diffuse e al contempo più gravi; ne basta una quantità minima per mettere a rischio la vita del soggetto allergico.
Le arachidi sono considerate uno degli allergeni più importanti, la cui presenza deve sempre essere segnalata come imposto dalla Direttiva UE 2007/68/EC; possono però risultare presenti a causa di processi di contaminazione incrociata, anche negli stabilimenti che non ne fanno uso. Questo può avvenire, per esempio, durante la produzione di dolciumi, merendine, prodotti da forno, cioccolato, biscotti, cereali e gelati. Alcuni produttori scelgono di tutelarsi con avvertenze di questo tipo: “Può contenere tracce di arachidi”.
Per i soggetti allergici è importante avere la garanzia che un prodotto alimentare sia effettivamente privo di frutta arachidi, se dichiarato tale. È quindi necessario controllare attentamente tanto le aree produttive quanto i prodotti finali.
