Des solutions analytiques fiables pour la gestion efficace des allergènes
Allergènes (bandelettes allergènes, PCR, ELISA, enzymatique)
La majorité du grand public considère que la consommation d’aliments est sans danger. Elle peut cependant entraîner des risques mortels chez les sujets allergiques et considérablement limiter leur qualité de vie.
Les scientifiques estiment qu’environ 2 à 4 % des adultes et 6 à 8 % des enfants souffrent d’allergies alimentaires ; sans oublier les intolérances alimentaires dont la prévalence est difficile à estimer en raison du manque d’études sur ce sujet. À la différence des intolérances alimentaires, les vraies allergies alimentaires sont extrêmement dangereuses pour les patients car elles sont dues à des réactions immunitaires erratiques. Ces réactions sont généralement déclenchées par des protéines chez des sujets allergiques déjà sensibilisés à ces protéines.
L’étiquetage de ces protéines allergènes est très important pour les sujets allergiques. Dans ce contexte, les allergènes sont dangereux de par leur nature cachée (dans les plats pré-cuisinés, par exemple) ou parce que les aliments ont été involontairement contaminés pendant leur fabrication ou leur stockage.
Régulation des allergènes
Une réglementation relative à l’étiquetage des aliments a été adoptée en Europe afin de protéger les personnes allergiques contre la consommation d’allergènes indésirables. Ce règlement européen est constamment révisé et mis à jour (règlement européen 1169/2011, entré en vigueur en décembre 2014). Depuis novembre 2005, les producteurs de denrées alimentaires se sont engagés à étiqueter les ingrédients susceptibles de provoquer des allergies ou des intolérances. Ces ingrédients englobent les substances suivantes ainsi que leurs produits dérivés :
Les teneurs supérieures à 10 mg/kg de dioxyde de soufre et de sulfites doivent également être mentionnées sur les étiquettes. Concernant l’étiquetage, d’autres pays disposent de règlements adaptés aux allergènes qui leur sont propres. Par exemple: Histamine.
Analyse des allergènes : bandelette allergène, PCR, ELISA ou enzymatique !
La plupart des chaînes de production permettent de fabriquer différents produits, ce qui peut entraîner des contaminations involontaires par des allergènes. Pour protéger les consommateurs et garantir un étiquetage adéquat, une analyse fiable des allergènes doit être effectuée.
